A typical Mediterranean species, the Red Shrimp (Aristaeomorpha Foliacea) is fished offshore, deep in crystal clear waters (between 200 and 1,000 meters deep). It owes its name to its distinctive and easily recognizable coloration, a deep, bright red reminiscent of coral tones, and presents exquisite, juicy, firm flesh with a unique and unforgettable flavor.
The red shrimp of Mazara, or “ammaru russu” in Sicilian, is a species of shrimp mainly fished in the waters of the Mediterranean Sea.
One of the peculiarities of this species is its deep and bright red color and the appreciation of chefs from all over the world for the taste of its flesh. It is firm and white, with a unique and unmistakable taste.
In the warm months, the head of the shrimp darkens due to the presence of eggs, also called “shrimp caviar”, which can also be used to make delicious pasta dishes.
